Beet-cured Red Snapper: smoked apple ponzu, nori mustard
Vol-au-Vent: shiitake mushroom duxelle, oyster mushroom gravy, black truffle creme fraiche
Duck Confit Rillette: pastrami spice, sauerruben, rye toast
Beef Tartare: caviar, cured egg yolk, shallot soubise, fingerling potato chips
Lamb & Lobster: paella rice cake, grilled radicchio, shellfish-lamb jus
Rum Baba: citrus, apricot, hazelnut, toasted vanilla whipped cream
